Kitchen Goodies: Chicken & Noodle Patties
About 8 weeks ago I started a pretty extreme diet, thanks to my Naturopath. This is one of the first successful dinner recipes that actually tastes fantastic! It’s 100% MSG free (which includes gluten, dairy and egg free ingredients). Here goes:
50g rice noodles
500g skinless chicken breasts/thighs
1/2 cup torn coriander leaves
2 spring onions, sliced
2 tablespoons potato flour (plus extra to coat)
1 tbsp sambal oelek (chilli paste)
1 tsp sesame oil
1/2 tsp pepper
1/2 tsp cinnamon
1/4 cup rice bran oil
1) Put the noodles into a bowl, cover with boiling water and set aside for 10 minutes or until soft. Drain well. Cut the noodles into short lengths. 2) Put the chicken, coriander, spring onions, potato flour, samba oelek, sesame oil, pepper and cinnamon into a food processor until well combined*. Transfer to a bowl. 3) Add the noodles and mix well. Shape the mixture into 6 flat patties and coat in the extra potato flour. 4) heat the oil in a fry pan over medium-high heat. Fry the patties for 5 minutes each side, or until firm. Drain on absorbent paper. Serve with either GF free sweet chilli sauce or some freshly squeezed lime juice and coriander. 
These were so tasty, definitely going to be in my food staples from now on!
* I don’t have a food processor, so I used my Bamix to mince the chicken. This resulted in mum slicing her finger though, so please be careful!
